Notable Opening: Sushi Ko in Merrick

Sushi Ko was so new that the first two times that we dined there that they hadn’t even yet printed up their menus for takeout. We arrived during the soft opening of the restaurant, a time that normally gets all of the kinks out of the wait staff and perfects the recipes and presentations of the cuisines at hand. Surprisingly, Sushi Ko performed at a level that screamed more “we’ve been at this for years!” than “we’ve only been open for days.”


Merrick, along with the rest of Long Island, is flooded with quality sushi joints. Littering the south shore, we could ramble off about a dozen top-notch Japanese restaurants. To stand out, the decor and the cuisine have to stand above the rest. A bi-level restaurant, with a quieter upstairs consisting of a few tables and some booths were you can sit low to the floor, the decor is modern and forward thinking. You can also eat downstairs at the sushi bar or one of the tables as well.

Highlights for us included an appetizer of a sushi pizza, with fresh salmon and tuna overlayed on a large fried wonton chip with scallions and avocado. We tried this both times and each time it was a flavorful combination that left us wanting more. The special rolls, although hitting in the $11-$13 range are rather large and you should be able to order less rolls and still be satisfied. The quality of the sushi and the size of the rolls will bring us back for more in the coming months to support a new restaurant that is quickly becoming one of our favorites.
