Fairway Friday: Bread Edition!

Straight from the mind of Kim Clarry, the bakery manager in Fairway’s Plainview location are three great recipes for Ciabatta. These are a perfect summer treat that will reward you past the wonderful baking process. Follow on through to see what we’re cooking up!

Grilled Vegetable Ciabatta Sandwich

1 Fairway Ciabatta
1 zucchini
1 yellow squash
3 peppers (yellow, red, orange)
1/4 eggplant
2 tablespoons Fairway extra virgin olive oil
2 tablespoons balsamic vinegar
Slice all vegetable thin mix with olive oil, salt and pepper.
Grill vegetables on BBQ.
Drizzle balsamic vinegar on Ciabatta bread
Place vegetables on top, cover sandwich and cut.

Grilled Ciabatta Pizza

1 Fairway Ciabatta
4 oz crumbled blue cheese
8 oz mushroom of choice
½ onion thinly sliced
2 tablespoons of olive oil
3 tablespoons Fairway Sundried Tomato Pesto
Slice Ciabatta lengthwise.
Brush Fairway extra virgin olive oil on both sides of bread
Spread Sundried Tomato paste on top of bread
Top with mushrooms, sliced onions and crumbled blue cheese.
Place on BBQ until cheese is melted.

Grilled Baguette Stromboli

1 Fairway Baguette
1 Tomato
6-8 slices of Fresh Mozzarella Cheese
3 Tablespoons Fairway Basil Pesto Spread
2 Tablespoons olive oil
8 slices Prosciutto Di Parma

Toast bread on BBQ grill
Rub Pesto on inside of bread.
Layer with Prosciutto Di Parma, Tomato and Cheese.
Slice and serve.
